How to eat 4 pounds of veggies in one day

Today is the Ides of March. Whatever that means.

I mean, I know that Brutus and Longinus stabbed Ceaser on March 15th (depicted quite accurately in Shakespeare’s Julius Ceasar), but is there more to it?

Something tells me that soon enough, The Ides of March will be much more culturally significant, thanks to George Clooney.

Now that we’ve cleared that up, let’s get to it.

I don’t subscribe to any special diet. Like I said, I eat what I want but I am interested in the science, because….well, because I am a scientist. That’s what we do. But there sure is a lot of conflicting information out there. Enough to make my head spin, if I’m not careful. Admittedly, my head spins a lot easier these days, but still. You see my point.

One tried and true rule that will never stop being, um…true, is that you should eat as many fruits and veggies (read: whole foods) as possible. It seems simple, right? But many people falter in the execution phase.

But I am here to help you. Not that I am an expert at all.   Nor do I have a degree in nutrition.   But if anything, my copious consumption of vegetables is enough. (Plus, I’ll be a doctor soon, so…yeah.)

I am a veggie eating MONSTER. Out of curiosity, I weighed my veggies yesterday, and I took down 3 and a half pounds of vegetables. In a single day.   And that’s not even including the fruit.

And here’s where I tell you how I accomplish this feat of epic proportions. Buckle up.

You know how a lot of bloggers eat oats for breakfast? Not me. I’m not into sweets in the morning. Truth be told, I’m not much for food in the morning, mainly because it interferes with my coffee drinking. But, when I do break the fast, I do it with eggs.

And because no meal is complete without a side of roasted veggies, that usually happens too.

When lunch time rolls around (or the hunger pangs start to distract me from my work, I make a salad.

A salad that is known by various names in the blog world – I’ve seen HughJass salads, bucket salads, garbage salads, mixing bowl salads…..You get it.

The point is that the salad has A LOT of veggies. My typical salad weighs 1 1/2 to 2 pounds. Which is why I am glad there is no Whole Foods bar nearby. At $10 a pound, that’s an expensive bowl of veggies.

And what lunch is complete without dessert?

Call it a smoothie in a bowl, call it pudding. Again, there are all kinds of names for this out there. But like my “diet” (used in the very literal sense of the word), I don’t care what its called.

But it usually has some spinach in it. And by usually I mean always.

Then, dinner. My favorite meal of the day. The time to sit down and really enjoy your food. I know they say you shouldn’t eat in front of the computer, but who really has time for that crap? Certainly no one that I know.

Last night, I had Freezer Minestrone Soup. It’s a favorite of mine that takes exactly 3.5 minutes to throw together. I make it about once a month. Its a good way to use up the remainders of those bags of frozen veggies that are in your freezer.

And it makes leftovers, so you can replace those bags with soup for lunches later. Planned leftovers, eh, Averie?

So that’s what I eat. But you may be different. All I can say is that if you are having trouble eating enough veggies, there is one way to make sure that you get enough.

Make sure you have plenty of veggies on hand.

The best and cheapest veggie stock up method is to grow your own. But that’s a soapbox I’ll climb up on some other time.

If you can’t grow your ow, buy them. A lot of them.

But the key here (ahem, are you listening MOM?) is to not let these precious foods go to waste. Think of them as dollars sitting in your fridge. Would you throw out dolla-dolla-bills?

Clearly, this isn’t everything or even photos of exactly what I ate today, because taking pictures of everything I eat? Not going to happen. But, it is a pretty acurate depiction of yesterday’s main meals and what my normal daily fare does look like (if you add in a few cookies and candy and lots of nibbles of this and that….)

I’d say I get my 5-9 servings of fruits and veggies in, wouldn’t you?
